Prepare the Chicken: • Cut the chicken thighs into small bite-sized pieces. • Season the chicken with Creole seasoning, paprika, parsley, ground black pepper, and lemon pepper. Mix well to coat evenly. 2. Cook the Chicken: • Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat. • Add the seasoned chicken and cook for 6–8 minutes, or until fully cooked and golden brown. Remove from the pan and set aside. 3. Scramble the Eggs: • In the same pan, add 1 tablespoon of oil. Crack the eggs into the pan, season with a pinch of salt and pepper, and scramble until fully cooked. Remove the eggs and set aside. 4. Sauté the Aromatics: • Add the remaining oil to the pan. Sauté the minced garlic and ginger for 1–2 minutes, or until fragrant. 5. Cook the Vegetables: • Add the mixed veggies to the pan and stir-fry for 3–4 minutes, until tender. 6. Add the Rice: • Increase the heat to high and add the cooked rice. Stir-fry for 2–3 minutes, breaking up any clumps with a spatula. 7. Season the Fried Rice: • Drizzle the sesame oil, soy sauce, and hoisin sauce over the rice. Mix well to ensure the rice is evenly coated. 8. Combine Everything: • Add the cooked chicken, scrambled eggs, and chopped green onions to the pan. Toss everything together and stir-fry for another 2–3 minutes. 9.
