This smothered chicken gravy with mushrooms, will lift soul up on any day of the week and especially on those cold winter nights. This Southern classic is a must try in any kitchen. INGREDIENTS 8oz Thick bacon, cut lardons ( strips ), then rendered 2lb ( 908g )chicken, thighs and drumsticks, trimmed and patted dry Spice Mix 1Tbs onion granules/powder 1/2 Tbs Garlic granules/ powder 1 Tsp Smoked paprika 1 Tsp dry thyme 1 Tsp Black pepper 1/2 Tbs Kosher salt 1 Yellow onion, peeled and sliced 12oz Cremini mushrooms, quartered 1 tbs All purpose flour 1 Tbs Plain/ Greek yogurt, thinned with water or use heavy cream 1 Tbs chicken base 4 cups water or as needed.
