The green banana (matooke) is a staple food in the southern part of Uganda (and many parts of Africa and the Caribbean too). In this video I show you how to make a very easy and delicious all day meal called matkat or matooke katogo. Katogo literally means ‘anything goes’ implying that you can add whatever tickles your fancy to your list of ingredients from veggies to meat, chicken and offals.
