This sweet potatoes with carrots and peppers is so good and easy to make. Serve this soup as an appetizer or as a meal by itself. For this recipe we are using sweet potatoes, cauliflower carrots and some other basic ingredients all readily available in your pantry and the stores. INGREDIENTS 3 sweet potatoes, peeled and diced 2 carrots ,peeled and chopped 1 Medium cauliflower 1 Bell pepper, deseeded, roughly chopped 1 Red onion, peeled and sliced 1 Tbs Curry powder 1Tbs Vegetable base ( used better than bouillon ) 1/2 Tsp Thyme, dry Pinch red pepper flakes 1 Can coconut milk Salt and pepper 1 Tbs Cooking oil, or as needed Set oven at 400F 1 Garlic , remove excess peeling Some oil salt Black pepper 1 Tbs Plain yogurt 2 Scallions greens, chopped Extra virgin olive oil to finish
