INGREDIENTS 4 Medium sweet potatoes, peeled and cut bite size 1 Medium head broccoli, cut into bite size florets 2 Bell peppers red/orange, cut into bite cubes 1 ib. ( 454g ) Cherry tomatoes medley, big ones cut in half 1/2 Red onion ( 1 Medium ) peeled , cut stripes For the marinade 1 Tsp Cumin 1 Tsp Paprika 1/2 Tsp Dried thyme 1 Tsp Oregano 1 Tsp Kosher salt 1/2 Tsp Black pepper 2 Tbs Balsamic vinegar 2 Tbs Olive oil Pinch red pepper flakes ( optional )
