In this quick, easy and appealing rice dish, I used local(organic) dodo or green amaranth and green beans to give the rice a wonderful and healthy looking green color and tossed it with strips of carrot. The dish can be enjoyed as a meal on its own or you may choose to serve it next to fried eggs, omelette, grilled meat or chicken.
