Blackened Mahi Mahi with Cilantro-Jalapeño Crema & Mango Salad Ingredients For the Blackened Mahi Mahi: • 2 lbs mahi mahi fillets • 4 tbsp olive oil • 1 tsp onion powder • 1 tsp garlic powder • ½ tsp cayenne pepper • 1 tsp smoked paprika • 1 tsp chili powder • 1 tsp dried parsley • ½ tsp cumin • ¼ tsp dried parsley (extra) • 1 tsp salt • ½ tsp salt (extra) • ½ lime, juiced • ½ orange, juiced For the Cilantro-Jalapeño Crema: • 4 oz sour cream • 2 tbsp milk • ½ jalapeño, seeds removed • 1 garlic clove • 5 tbsp fresh cilantro • Salt and pepper to taste For the Mango Salad: • 2 limes, juiced • ½ orange, juiced • 1 mango, diced • ½ cup fresh cilantro, chopped • ¼ small bell pepper, diced • ¼ small red onion, finely chopped • Salt and pepper to taste For Serving: • Warm tortillas (optional) • Extra lime wedges Instructions 1. Marinate the Mahi Mahi 1. In a small bowl, mix onion powder, garlic powder, cayenne pepper, smoked paprika, chili powder, dried parsley, cumin, extra dried parsley, salt, and extra salt. 2. Pat the mahi mahi fillets dry and rub them with lime juice and orange juice. 3. Coat the fish evenly with the spice mixture, pressing it in for maximum flavor.
