Respect for diversity has long been one of the core values of The Culinary Institute of America (CIA). On April 13, the National Restaurant Association honored the world's premier culinary college with its 2011 Faces of Diversity Inspiration Award in recognition of programs at the CIA's campus in San Antonio, TX.
Michael Sohocki, who graduated from The Culinary Institute of America in 2002, is the chef/owner of Restaurant Gwendolyn in San Antonio, TX. The unique fine-dining restaurant, located on the city's famous Riverwalk, offers a menu that changes daily and features local, handmade, seasonal ingredients. In this interview, Chef Sohocki tells us why he decided to create a pre-industrial-revolution-style restaurant, talks about Restaurant Gwendolyn's namesake, and reflects on how his CIA education prepared him for success.
