This chicken stew with Mediterranean flavors is so delicious and easy to make at home. The recipe uses basic pantry ingredients and is also very budget friendly. Once all the prep work is done, its just a matter of putting the dish together by first searing/ browning the chicken pieces...... INGREDIENTS 2lb. chicken, thighs and drumsticks, patted dry. 2 Tbs Olive oil Salt and Pepper 1.5 cups Yellow onions, peeled and finely diced 1 cup Bell peppers , red, yellow/ orange and green , diced small 1 tbs Garlic, chopped 1 tsp Tomato paste 1/2 tsp thyme, dry 1 tsp Oregano, dry 1 tsp Paprika 1/4 tsp Red pepper flakes 1 tsp Rosemary, fresh ( 1/2 tsp if using dry ), reserve some for finishing and garnish 2 Medium bay leaves 4 Yukon gold potatoes, peeled and diced bite size 2 Medium carrots, peeled and cut bite size 2 cups Chicken stock, or more as needed to slightly cover chicken ( or water ) 1 Tbs balsamic vinegar or red wine vinegar
