This Beef and Barley is one of my favorite and barley is also so good for you, packed with fiber and essential nutrients. This delicious one pot stew or soup is so easy to make at home with just a few pantry ingredients. For my take on this classic recipe am using beef chuck cut into bite size and pearled barley. INGREDIENTS 2 Tbs Avocado oil or your preference 2lb Beef chuck, cut into bite size 1/2 Tsp Salt and 1/2TspBlack pepper to coat the beef 1 Large yellow onion, peeled, diced 2 Medium carrots, peeled, diced 4 Ribs celery, washed, diced 2Tbs Garlic, chopped 1 Tbs Coriander 1 Tsp Cumin 1 Tsp Paprika 1 Tbs Tomato paste 1 Tsp Thyme, chopped 1 Tsp Rosemary Pinch red pepper flakes 1 Tbs Worcestershire sauce 1 Tbs Red wine vinegar 1 Tbs Beef base ( Better than Bouillon 4 Cups water to start, then add as needed 2 cups Barley 1/4 cup parsley, chopped for finishing and garnish
