Cassava is one of my absolute favourite root tubers to eat. In this video I share a simple recipe in which bite size pieces of cooked cassava are first stir fried with assorted veggies and then eggs are added and scrambled for a wonderful breakfast or brunch meal. I love having this on a weekend morning INGREDIENTS 1 - 2 servings 2 cups Cooked cassava, cut into cubes 3 tbsp Cooking oil 1 cup Onion, sliced 1 Carrots, juliened 1/2 cup Green beans, cut into 1 inch lengths ¼ cup Mixed bell peppers, cut into thin strips 2 tbsp Scallions, sliced 2 - 4 Eggs 1 tsp Lemon pepper Salt to taste Enj😄y.
