In this video Miss tourism Uganda 2017 Her majesty queen Challa Elma Kapel shared with us the aquired skill of how to make the Nigerian jollof rice, step by step and dos and donts and it must say it was nice, We used: 2red bell papers 3 red chillies 1 red habanero (diseeded) 2 ripe large tomatoes 2 red onions Ginger knuckle 4 cloves of garlic 4 seasoning cubes 1tbl curry powder 2tsp smoked paprika 500g long grain basimati rice 100ml cooking oil 200mls stock /broth/water Method. Wash and soak your rice for as long as 2hours and rinse it until all the water is clear (no more wearing off starch) Roast all the fresh ingredients in the oven or airfryer or just in a covered pot on fire but no water until they’re juicy, Blend them into a smooth consistency On a hot pan add palm or regular vegetable oil and add chopped onions When they start browning add the pepper and tomato mixture and cook on low heat. Add seasonings and mix well, Add the rice and mix well Add stock or water and cover tightly Let it simmer on low heat until it’s ready, Serve with a protein of choice and enjoy.
