HOMEMADE CHICKEN POT PIE T = tablespoon t = teaspoon CRUST: 2 1/2 cups all-purpose flour 1 t salt 1 cup unsalted butter or 1/2 cup butter with 1/2 cup shortening or lard 8 T iced water COOK THE CHICKEN: 2 cups low sodium chicken broth 2 boneless, skinless chicken breasts (1 lb.) Reserve the broth COOK THE FILLING: 1 T salted butter 1 small yellow onion 2 celery stalks 2 medium carrots 1 t fresh thyme leaves or 1/2 t dried thyme 3 T salted butter 3 T all-purpose flour 1 cup whole milk the reserved chicken broth 1/2 to 1 cup frozen green peas salt to taste EGG WASH: 1 egg 1 t water TIP: This dish is great with Louisiana hot sauce splashed all over.
