1 Bunch green bananas ( Matoke ) about 5 bananas, peeled and soaked in acidulated water ( Lemon juice added to water to prevent turning brown or oxidation ) Water to cover , for boiling 2 Tbs Vegetable oil 1 white onion, peeled and diced 1 Tbs Garlic, chopped 1 Tbs Ginger, minced 1 Tsp Curry powder 1 Tsp Cumin coriander 1/2 Tsp Turmeric 1 Tsp Paprika 2 Ripe tomatoes, medium size 2 Bay leafs Reserved water from boiling the bananas, use as needed to create sauce Salt and pepper to taste
