A very comforting dish of rice and meat with potatoes, carrots and peas. Comes together easily in one pot and is very delicious too. INGREDIENTS 3 lbs Certified angus beef, bottom round extra fat trimmed and cut, cut into bite size 2 Tbs Vegetable oil Salt and pepper to taste 1 Tbs Garlic, minced 1Tbs Ginger , minced 4 Sprigs thyme ( 1 Tsp Thyme fresh or 1/2 Tsp Dry ) 1 Sprig Rosemary ( 1/2 Tsp dry ) 2 Bay leaves 1/4 Tsp Red pepper flakes ( optional) 1Tbs Worcestershire sauce 1 Tsp Lemon juice 3 Cups beef stock, more if needed 2 Medium carrot, diced small 1 cup bell peppers, mixed colors 2 Russet potatoes, peeled and cut into bite size 2 Ripe Tomatoes, diced 1/2 Bunch cilantro, ( cilantro roots and stems too ) 1Cup frozen peas
